Ropa vieja — literally "old clothes" — began in the Canary Islands and crossed the Atlantic with the immigrants who helped build Cuba. Legend says a poor man, with nothing left to feed his family, shredded and cooked his own clothes while praying over the pot — and the rags turned into rich, tender beef. Whatever you believe, the dish became Cuba's national plate, and every Cuban family has its own version.
Ours starts with flank steak braised low and slow until it falls apart, then simmered in a sofrito of tomatoes, peppers, onions, and garlic that has not changed since we opened on Calle Ocho in 2001. It's the dish our regulars order first and the one we tell first-timers not to skip — one of the reasons guests call us the best Cuban restaurant in Miami.
